4 free range organic chicken Breast
3 tblsp melted coconut oil
1 tblsp curry powder ( read the ingredients list as some curry powders have sugar and anti caking)
1 tsp turmeric
1 tsp ground coriander
1/2 – 1 tsp cinnamon
1/4 cup coconut water
Handful of chopped fresh coriander
Juice of 1 Lemon
Combine the marinade ingredients in a large bowl.
Add the chicken breast. Refrigerate for a few hours or overnight……
I wanted it for my lunch, so I sliced the chicken up and marinated it for 15-20 mins, while I put my salad together and cleaned the kitchen…..
Heat a frypan over med to high heat, add a little coconut oil.
Cook on both sides until cooked through.
