1 kg Paleo beef sausages
1 400gm organic diced tomatoes
500 mls homemade bone broth
2 onions roughly chopped
4-5 cloves of garlic crushed
1 large carrot, diced into large pieces
1 zucchini, diced into large pieces
1 red capsicum, diced into large pieces
1 med white sweet potato
1 tsp organic curry powder
1 tsp organic turmeric
1-2 tsp coconut oil
1 tsp mix herbs
Heat a heavy based saucepan over high heat, add coconut oil.
Add onion and garlic to pan, cook until lightly browned, add curry powder and turmeric, cook for 2-3 mins, add remainder of the veggies.
Add the canned tomatoes and bone broth, mix well.
Add whole uncooked Paleo sausages to the pan, simmer over low heat for approx 40 mins or until it reduces to your liking.
Chop sausages into bite size pieces
Season with salt and pepper to taste
Serve with cauliflower rice.
