this is a regular in our house, i can guarantee the boys will eat all of their veggies with this meal…… they even ask for this meal 2-3 times a week.

I too like to have this as part of my breakfast bowl….. yummy

We serve this as a main meal topped with steak, chops or even scrambled eggs.

 

500gm nitrate sugar free, free range bacon, diced

1 lg onion, diced

1-2 cloves of garlic

1 sm or 1/2 lg head of green cabbage, shredded

1/2 a head of red cabbage, shredded

3-4 leaves of kale, finely shredded

1 red capsicums, thinly sliced

i will  use any other veggies that need to be used up, like celery, zucchini, and carrot.

In a large wok or fry pan, heat 1 tsp of coconut oil, fry off bacon, onion and garlic until bacon is crispy. remove from wok and set aside.

Add 1 tsp of coconut oil to wok, fry off green and red cabbage with the kale, cook until wilted.

Add bacon and onion back to the wok, along with capsicum and any other veggies that you like, cook for another 2-3 mins.
