1large head of cauliflower, cut into florets
1 tblsp coconut oil
4 bacon short cuts, diced
4 eggs, whisked
1 brown onion, diced
2 cloves of garlic, crushed
2 cm piece of fresh ginger, finely grated
1 carrot, diced
1 red capsicum, diced
1 zucchini, diced
1 lrg stick of celery, diced
6 spring onions, finely sliced
1-2 tblsp Braggs
200gm cooked chicken, diced
Dash of coconut water or water
Pulse the cauliflower in a food processor until it resembles rice.
In a large fry pan heat oil, fry bacon, onion and garlic and cook for a few minutes or until softeneds. Add the remaining veg and cook for a few minutes, or until cooked to liking.
Add the cauliflower and cook for 2-3 min. Deglaze with coconut water.
Meanwhile make on omelette with the egg in a separate fry pan. Allow to cook and chop into large chunks.
Stir Braggs, egg, spring onions and chicken though the fried rice.
Serve as a main meal but is great in lunchbox’s too
You can also cook the eggs and add them to the top of your fried “rice” like nasi gori.
