Chicken tikka masala

Chicken tikka masala
Marinate ingredients
8 skinless chicken breasts cut into bite size pieces
1 bunch fresh coriander, finely chopped
1 tablespoon lemon juice
1 270 gm can coconut milk
10 cloves garlic finely chopped garlic
4 tablespoons finely chopped or grated fresh ginger
Small pinch cayenne pepper (or more, for a spicier dish)
Generous pinch of salt (you can add more to the sauce later, if

needed)
1 tablespoon cinnamon
1/2 tablespoon chili powder
1 tablespoon turmeric
1/2 tablespoon ground black pepper
Instructions:
I make the marinade, combine it with the chicken then put this all into a large zip lock bag and put it in the freezer. I then make the sauce and put that into separate container. When I want to use it, I defrost and continue with the following instructions.
Preheat the oven to 200 degrees
Combine all the ingredients in a large baking dish.
Bake the chicken, until golden brown and just cooked
While the chicken is baking, make the sauce.
Sauce Ingredients:
1/4 cup olive oil
1 tablespoon coconut oil
2 yellow onions, sliced thinly
170 gm tomato paste (or less, for a less tomato-y sauce)
1 270 gm tin coconut milk
2 x 400gm tin diced tomatoes
1 tablespoon fresh lemon juice
8 cloves of garlic, finely chopped
1/2 cup water
2 teaspoons paprika
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/2 teaspoon garam masala (an Indian spice blend)
1/2 teaspoon turmeric
Instructions:
In a large, deep pan over medium heat sauté the onions in the olive and coconut oil until golden brown, about ten minutes.
Add the remaining ingredients, mix well, and let simmer 20 minutes, stirring often.
Add chicken to sauce simmer for 20 mins

Weekend Food Prep

Food prep is done on the weekends for me, I try to get most of it done on Saturday, so I can do the beach thing with the boys on Sunday.

Salads in some form or another are always in Steve and my lunchbox.
This week we have roasted broccoli & asparagus, roasted sweet potato, plain & satay cooked chicken & marinated mushrooms, served with lots of greens

I prep the boys and my breakfast on the weekend.
The boys have this on school days: 1/2 cup of rolled oats with almond milk or raw milk, topped with banana and Greek yogurt
I have 1/2 cup of rolled oats with boiling water topped with 1 tsp of macca powder, chia seeds & cacao powder. In the morning I add frozen berries & Greek yogurt

I always prep up a big fruit salad, this is the boys favourite snack on the way to after school sports. I have prepped pawpaw & peaches, hard boiled eggs for snacks, I will also have small bags of nuts prepped and lots of cut up carrots ( my favourite with hummus )

I like to have 3 meals prepped or cook and in the freezer, so no matter what we are working or if the boys have late sport on, we can still get a healthy dinner on the table. This week I still had turkey & pumpkin curry in the freezer.
I marinated 5 kg of chicken in satay sauce, this will become skewers w/ salad this week, and I also did the boys favourite sweet potato Shepard’s pie ( recipe to come)
