Garlic Bread


3 cups almond meal
3/4 tsp baking soda
1/4 tsp real salt
1 Tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
4 eggs, whisked
1 tsp brags
1 tsp raw honey
3/4 tsp apple cider vinegar
1/2 zucchini finely grated
1/2 cup chopped fresh parsley
Preheat oven to 160*
Mix the dry ingredients in a large mixing bowl, in a separate bowl mix the wet ingredients and the zucchini. Add wet ingredients to the dry, mix until completely incorporated.
Oil a loaf tin, I used 2 baby loaf tins.
Scrap all the batter into tins.
Sprinkle with a little parsley.
Bake for around 20/25 min or until golden brown and a skewer comes out clean when inserted.
Yummy straight out of the oven, spread with some avocado.
Boys will have this in their lunchbox with meatballs.
I will make them in square muffin tray next time for the lunchbox

Banana Bread


1 1/4 rolled oats
2 Tblsp raw honey
2 Tblsp coconut oil
1 cup rolled oats made into flour
1/2 tsp baking soda
1/4 tsp real salt
1 tsp macca powder, optional
1 egg
1 1/4 cups of frozen or overripe bananas about 3 lg bananas
1/2 cup unsweetened shredded coconut.

Preheat oven to 180*.
Mix rolled oats, honey and oil in a mixing bowl. In a separate bowl mix oat flour (rolled oats put in blender and blended down to flour) baking soda, macca powder and salt.
Add egg, banana, and coconut to rolled oats, mix well. Add oat flour to rolled oats, mix well.

Line baking tin with baking paper.
I used 3 mini loaf tins.

Top with a few slices of fresh banana. Cook for 35- 40 or until skewer comes out clean. Serve with fresh berries and Greek yogurt. Great for breakfast

Unsweetened Almond Milk

Almond milk has got to be the easiest thing to make.
You don’t have to be dairy free to enjoy almond milk. I use it an my overnight soaked oats, in smoothies, muffins, pancakes, anything you would use milk you can use almond milk.
The unsweetened almond milk that you can buy may have no sugar but its still not a “clean” product.
This almond milk is sugar free and “clean” and so easy.
Will keep in the fridge for 4-5 days. Give it a shake before you use it.

Seed Sprinkles

We call this our “sprinkles”
I use this mix to make my raw muesli and toasted muesli.
I sprinkle it on fruit salad topped with cacao mousse and Greek yogurt, sprinkled on plain Greek yogurt. Add it to what every you like.
Add as little or as much of cinnamon as you like. I use a lot.

Veggi bake

Veggi Bake
2 zucchini, grated
1 carrot, grated
Sweet potato, grated, same amount as carrot
5 eggs, lightly whisked
1 cup almond meal
Pinch of salt
Line a lasagna baking dish with baking paper.
Preheat oven to 180*
Mix grated veg together in a large mixing bowl.
Add almond meal and salt, mix to combine. I find hands are the best tool for this.
Add eggs. Stir until just combined.
Pour mixture into prepared dish.
Bake for approx 45 min. To be honest I completely forgot about mine, I think it was in oven for approx 60.
Veggi bake is cooked when firm in the middle.

Oat flour Waffles/pancake

oat waffle


Oat waffles/ pancakes
This makes around 16 waffles.

Great to have in the freezer
6 cups oats blended to flour
4 tbsp baking
1/4 tsp real salt
2 cups of milk of choose
1 cup of Greek yogurt
2 tbsp real maple syrup
6 eggs whisked
Whisk dry ingredients together.
Whisk wet ingredients together.
Add wet to the dry mix and whisk well. Spoon into waffle maker or fry pan if making pancakes. Cook until golden brown on both sides. This mixture thicken so add more liquid (can add water) if needed.
