Cacao & Oat Slice
8 medijo dates, seed removed
1 cup oil free sultans
½ cup almond meal
½ cup chia seeds
¼ cup sunflower seeds
2 ½ cups wholegrain rolled oats
¼ cup raw cacao powder
½ cup coconut butter
Splash of unsweetened almond milk
1/2 cup cocoa powder
1/4 cup coconut oil, melted
1 Tbs pure maple syrup
1/4 tsp pure vanilla extract
You can make coconut butter so easily, all you need is a high powered blender and a packet of unsweetened shredded coconut, I use organic.
Put coconut in blender and blend for 3-5 mins…….wow coconut butter. I used a whole packet of coconut for this recipe
Put the first 7 ingredients into food processor, process until fine crumbs. Add in the coconut butter, add almondmilk if mixture is too dry. process until well combined.
Line a slice tray with baking paper. Spread mixture evenly, then press down really firmly .
Mix all the icing ingredients together, you may need to put it in the microwave for 20 sec if it gets to thick. Spread evenly over slice.
Put slice in the fridge or freezer to firm up slightly, cut into pieces, I got 24 sm pieces. Store in a container in the fridge, but make sure it is at the back of the fridge out of sight, so you are not tempted to have some every time you open the fridge.
